Cutting Off A Leg
You don't want to try and cut through a bone - the shoulder joint will just pull apart once it is cooked. The trick is to open up the legs so you can see where the pivot is.

Apparently letting it sit for a while helps the meat reabsorb the juices which makes it juicier and easier to cut. You wrap it in foil to reduce the heat loss.
