Crusted Salt On Salmon
This is after the Salmon has come out - the salt on the bottom is stained brown (I'm guessing the fish leaked fluid), but a hard (and very hot) layer has formed around the fish.
Fish Buried In Salt
First we layed of bed of about a quarter inch of salt, then gently layed the fish down, and then poured enough salt over so there weren't any thin spots. By this point (5 kg of fish, 2 kg of salt) the tray was getting heavy.
